Barbecued Lamb


A couple of sprigs of fresh rosemary leaves, to your taste
4 large cloves of garlic, peeled and roughly chopped
salt and ground black pepper, to taste
extra virgin olive oil
red wine vinegar or red wine
1 filleted leg of lamb
a few knobs of butter
about 1/2 cup fresh mint leaves
1 fresh red chilli


Crush rosemary leaves, garlic, and salt and pepper in a mortar with the pestle. Add about 4 tablespoons of olive oil and a splash of vinegar or red wine. Mix well and rub the paste all over both sides of the lamb.

Leave the lamb in the fridge to marinate overnight.

Sort the barbie so that it has nice hot coals, no flame. Put the lamb on and turn it over about every minute or two and rub with butter occasionally. You need to keep doing this until the lamb is cooked to perfection (slightly pink in the centre). It should take not much more than 15 minutes.

Cut the lamb into slices and eat hot with salads etc…
